邢台地区柿子发育过程中不同部位维生素C含量测定

摘  要:
为了解邢台地区柿子营养成分含量,进一步促进柿资源的应用。采用2,4-二硝基苯肼法对邢台地区柿子的不同发育时期、不同部位的维生素C含量进行测定。结果表明:邢台地区柿子在发育过程中维生素C含量逐渐升高,至过熟期时含量达到最高。维生素C主要存在于果实的果皮(37.03mg·100g-1)、果肉(35.73mg·100g-1)中,显著高于《中国食物成分表》中的数据(30mg·100g-1),而其种子和柿蒂部分维生素C含量极低。

摘  要:
In order to understand the nutrient content of persimmon in Xingtai area and further promote the application of persimmon resources.Vitamin C content of persimmon at different developmental stages and parts in Xingtai area was determined by 2,4-dinitrophenylhydrazine method.The results showed that the vitamin C content of persimmon in Xingtai area increased gradually during its development and reached the highest level at the overripening stage.Vitamin C was mainly found in the pericarp(37.03 mg·100 g~(-1))and pulp(35.73mg·100g~(-1)),which was significantly higher than the data in the chinese food composition table(30mg·100g~(-1)),while the content of vitamin C in seeds and persimmon calyx was very low.
