核磁共振技术在水果品质检测中的应用

摘  要:
核磁共振及其影像技术作为一项新的检测技术在医学上取得了广泛的应用,在农业、食品行业也逐渐开始应用。为此,阐述了核磁共振及其影像技术的基本原理,并从水果内部品质、成熟度、内部缺陷、损伤及水果贮藏等方面介绍了国内外核磁共振技术在水果检测中的应用研究进展,并探讨了研究应用中的优点与局限,展望了核磁共振技术在水果检测中的应用前景。

摘  要:
Nuclear magnetic resonance (NMR) and magnetic resonance imaging (MRI) have been widely applied in medicine science, and preliminarily applied in agriculture and foodstuff. In this paper, the basal principle of NMR and MRI was illuminated. Some introductions of application study on NRI in inner quality, mature, inner flaw and damage, storage of fruit were presented. The excellence and limitation in research and application were talked about and the prospect of NRI applied in fruit was offered.
