杏皮渣醋香气成分分析

摘  要:
【目的】对杏皮渣醋香气成分进行分析并了解其组成。【方法】采用同时蒸馏萃取法(simultaneous distillation-extraction,SDE)提取杏皮渣醋香气,利用气相色谱-质谱(GC-MS)分析香气成分。【结果】杏皮渣醋含有16种酯类物质,占香气成分的49.84%。7种醇类物质,占香气成分的17.86%。7种酸类物质,占香气成分17.03%。6种醛类物质,占香气成分的3.20%。6种烯烃类物质,占香气成分的0.36%。8种酮类物质,占香气成分的0.89%,其他物质共10种,占香气成分的10.83%。【结论】杏皮渣醋香气成分由酯类、醇类、酸类、醛类、烯烃类、酮类以及其他物质组成;杏皮渣醋香韵由酸香、果香、甜香、青香、木香、花香、焦香组成。

摘  要:
【Objective】The aim of this study is to analyze and understand the aroma composition of apricot dreg vinegar.【Method】The aroma components of apricot dreg vinegar were extracted by SDE(simultaneous distillation-extraction) and analyzed by GC-MS.【Result】The results were as follows:the aroma material including 16 kinds of ester,7 kinds of alcohol,7 kinds of acid,6 kinds of aldehydes,taking up 49.84%,17. 86%,17. 03%,3. 20% of aroma compounds respectively,6 kinds of olefins,8 kinds of ketone,10 other substance,taking up 0. 36%,0. 89%,10. 83% of aroma compounds respectively.【Conclusion】Aroma components of apricot dreg vinegar consisted of esters,alcohols,acids,aldehydes,alkenes,ketones and other substances.
