牛乳脂肪甘油三酯中sn-2位脂肪酸组成的分析

摘 要:
用胰脂酶专一水解掉牛乳脂肪甘油三酯sn-1和sn-3位置上的脂肪酸得到sn-2单甘油酯和游离脂肪酸,再通过高效液相-蒸发光散射检测法分离出sn-2位单甘油酯,甲酯化后,用GC-MS对sn-2脂肪酸组成进行分析。结果表明石家庄地区夏季牛乳脂肪sn-2位脂肪酸主要有六种,分别为:月桂酸2.57%、豆蔻酸7.68%、棕榈酸34.74%、亚油酸11.56%、油酸22.53%、硬酯酸15.21%。

摘 要:
2-Monoacyl-sn-glycerols and free fatty acids were obtained from milk TAG upon hydrolysis of the acyl group in the 1-and 3-position of glycerol using porcine pancreatic lipase. Then 2-Monoa-cyl-sn-glycerols was separated by HPLC-ELSD,the 2-position fatty acid composition was determined by GC-MS of the fatty acid methyl esters. The results shows that 2-position fatty acid of milk were composed by Lauric acid 2.57%,Myristic acid 7.68%,Palmitic acid 34.74%,Linolenic acid 11.56%,Oleic acid22.53% and Stearic acid 15.21%.
