鱼类腐败菌腐败能力的研究进展

摘  要:
鱼类腐败是个极其复杂的过程,而微生物活动是引起腐败变质的主要原因。概述了鱼类的腐败过程和腐败微生物,特定腐败菌(SSO)的概念及其特征,以及一些特定水产品的特定腐败菌,特定腐败菌生长动态模型和产品剩余货架期的预测方法。其中,着重介绍了鱼类特定腐败菌以及腐败菌腐败能力的研究概况。

摘  要:
Fish spoilage is a complicated process,and microbial activity is the main reason for spoilage.An overview of the process of fish spoilage,the spoilage organisms of fish,the concept and characteristics of specific spoilage organisms(SSO),some SSO of specific aquatic products,the dynamic growth model of SSO and the forecast of remaining shelf life were summarized,in which the SSO of fish and the spoilage ability of spoilage organisms were emphatically introduced.
