枣片干燥过程品质指标实时监测系统

摘  要:
针对果蔬干燥过程中常规品质检测方法破坏性取样、效率低的问题,该研究以枣片为试验对象,设计开发并试验研究了枣片干燥过程代表性品质指标无损与实时监测系统.研究应用机器视觉和自动称重技术,实时获取和监测干燥过程中枣片的色泽和含水率参数;通过建立色泽参数(a*值)与代表性营养品质指标(维生素C、还原糖)的相关关系模型,实现干燥过程中枣片维生素C和还原糖含量无损与实时预测;基于LABVIEW对上位机监控软件进行集成设计,并对所开发的实时监测系统进行测试.试验结果表明:所开发系统监测色泽(L*、a*、b*值)变化趋势与色差计检测结果一致,L*、a*、b*值平均误差分别为0.93、0.52、0.73;系统监测含水率与人工检测平均相对误差为0.18%;系统预测维生素C和还原糖含量与人工检测平均误差分别为50 mg/100g(干基)和0.71g/100g(干基).研究结果可为果蔬干燥过程中品质变化的无损与实时监测提供参考和借鉴.
