带形蜈蚣藻多糖的流变性研究

摘  要:
利用水提醇沉法提取带形蜈蚣藻多糖,通过测定浓度、切变速度、温度和pH值等因素对多糖溶液粘度的影响,对带形蜈蚣藻多糖的流变学性质及其与其他多糖的协效增稠性进行了研究。结果显示,带形蜈蚣藻多糖溶液浓度≤1%时为"牛顿流体",操作温度80℃为宜;该多糖溶液具有良好的耐热稳定性、酸碱稳定性、较好的耐盐稳定性及较强的抗降解性能;冷冻和冷藏处理的多糖溶液粘度均有所升高,微波、超声波处理及添加一定量的苯甲酸钠对该多糖溶液的粘度影响较小;带形蜈蚣藻多糖与黄原胶有良好的协效增稠性,二者的最佳配比为9∶1。

摘  要:
In the thesis, the polysaccharide from Grateloupia turuturu was extracted by using water ion and alcohol precipitation method, and then the rheological properties of polysaccharide were researched through studying the effects of different factors such as concentration, shearing rate, heating temperature and pH value on the polysaccharide. The results showed that, polysaccharide from Grateloupia turuturu was "newton-fluid" when the concentration of the solution was less than or equal to 1%, and the optimum temperature for heating polysaccharide solution was 80℃. The viscosity was stable in acid and alkali solutions, the polysaccharide solution had good thermal stability and stability of salt tolerance and resistance to degradation, and the viscosity increased with the freeze-thawing treatment. The influence of microwave and ultrasonic treatment on the viscosity was small. The sodium benzoate had a certain effect on the viscosity of solution, and the polysaccharides from Grateloupia turuturu had strong synergistic effect with xanthan gum, as the best ratio of these two was 9∶1.
