伏令夏橙自然贮藏过程中可溶性蛋白质和酶活性的变化

摘  要:
试验分析了自然贮藏下的伏令夏橙(CitrussinensisOsbeck)果实的营养物质含量,果肉与果皮的可溶性蛋白质含量和SOD、POD、CAT活性在贮藏过程中的变化。结果表明,伏令夏橙贮藏过程中的内在品质的变化主要表现为酸含量显著下降;贮藏过程中果皮可溶性蛋白质含量显著高于同期果肉,两部位可溶性蛋白质含量均呈显著增加;SOD活性呈单峰曲线型,表现为先上升后下降,最大值出现在贮藏的第28d;果皮和果肉的POD活性表现不同,果皮POD活性先上升后下降,果肉的POD活性呈显著下降趋势;果肉CAT活性整体水平较低,果皮CAT活性在贮藏后期显著升高。

摘  要:
Studies were carried out on the changes of nutrient materials?熏 soluble protein?熏 SOD?熏 POD and CAT activities in Orange (Citrus sinensis Osbeck) during fruit storage. The results showed that the changes of nutrient materials were that organic acid decreased remarkably. The content of soluble protein in peel was higher than it in flesh at the same period?熏 and the contents of soluble protein in two parts increased obviously during storage. The change curve of SOD activity was single peak. SOD activity increased at first and then decreased?熏 and the peak of SOD activity occurred in the 28th days after harvest. Changes of POD and CAT activities were different. POD activity in peel increased at first and then decreased, but POD activity in flesh tend to decrease. CAT activity in flesh was low during storage but it in peel increased remarkably at latter stage.
