摘  要：
通过对黑龙江省5个城市7所有集中用餐食堂的市区寄宿高中学校学生连续3d每日三餐食盐和烹调油脂的实际消耗量进行称重调查(共计23 667人次用餐),计算得出每所学校学生的盐油日平均摄入量、三餐分别盐油平均摄入量和7所学校学生盐油总日平均摄入量,分别进行学校间比较和三餐比较,并对日摄入量数据与《中国居民膳食指南》建议盐油摄入限量进行了比较分析。调查发现,学校食堂供餐普遍存在盐油过量严重等问题,为此建议开展"减盐控油"计划,并从宏观和微观上提出了具体的可行性建议。

摘  要：
The survey involved students of 23667 person-time eating in canteen of seven urban high schools in five cities of Heilongjiang. Through weighing the amount of salt and cooking oil consumption in school canteen for three meals a day of three consecutive days, the average salt and oil intake amount per day per person of each school,the average salt and oil intake amount per person of each meal, and the average salt and oil daily intake amount per person of all the schools surveyed were calculated. Data obtained between schools and meals were compared and analyzed respectively,and the daily intake amount data were compared with suggested limitation value of salt and cooking oil in Dietary Guideline for Chinese Residents. Problems such as excessive amount of mostly students' salt and cooking oil intake with school canteen meals were found from the survey. Therefore,implementing the Plan of Salt Reducing and Oil Control was suggested, several specific and feasible recommendations of macro and micro were proposed.
