猪血浆中糖原酵解酶活性与氟烷基因型及肌肉品质的相关性

摘 要:
本文以40头猪的试验材料研究了血浆中丙酮酸激酶、磷酸果糖激酶、乳酸脱氢酶和氟烷基因型及PSE肉的相关。研究结果表明:氟烷阳性HAL~(nn)基因型猪血浆丙酮酸激酶和乳酸脱氢酶极显著地高于氟烷阳性HAL~(NN)基因型猪(P<0.05),而且血浆丙酮酸激酶及磷酸果糖激酶的对数值与肌肉品质指标pH值存在显著相关性(P<0.01);血浆丙酮酸激酶活性值及对数值也与其他肉质指标如系水力和光反射值存在较高相关(P<0.001);乳酸脱氢酶与肉质指标也呈较高相关的趋势。

摘 要:
Forty pigs were used to study the possible relationship between plasma pyruvate kinase (PK), phosphofructokinase (PFK) and lactate dehydrogenase (LDH) and halothane Genotype. The activities of plasma PK and LDH in HAL~(nn) pigs were significantly higher than those in HAL~(NN) pigs (P<0.001, P<0.01). Plasma PK activityin HAL~(nn) pigs was also extremely higher than that in HAL~(Nn) pigs (P<0.001). There is a significant difference of plasma PFK activity between HAL~(nn) and HAL~(NN) pigs (P<0.05). The relationship between plasma enzymes and meat-quality parameters showed that plasma PK and log PK were sigificantly related to pH value, water holding capacity and colour reflectance value respectively (P<0.01). The only clear relationship between plasma PFK and meat quality is the one between log PFK and pH value (P <0.01). Plasma LDH acivity was not significantly but highly related to the parameters of meat quality.
