扬州鹅及其杂交配套组合肉用仔鹅生长性能、屠宰性能和肉品质比较

摘  要:
以扬州鹅亲本(A×A和B×B)及杂交配套组合(B×A、K×A、D×A和C×A)为试验材料,测定其0~10周龄生长性能及10周龄屠宰性能、常规肉品质和肌肉化学指标。结果表明:6个群体中,屠宰率为85.19%~91.40%,全净膛率为69.12%~74.86%,K×A群体屠宰率、全净膛率、半净膛率显著大于A×A和B×B,各试验组胸肌率和腿肌率大于对照组A×A和B×B(P>0.05);K×A和B×B群体体重显著大于其余4个群体,4~6周龄各群体周增重均达到最大值,K×A和B×B群体周增重显著大于其余4个群体,K×A和B×B群体早期生长速度最快;各群体肌肉肉色L*、b*值差异不显著;K×A群体胸肌和腿肌pH值显著或极显著低于A×A群体;B×A群体母鹅胸肌粗蛋白含量显著大于其余群体;K×A群体母鹅胸肌粗脂肪含量显著小于其余群体;B×A和C×A群体腿肌粗灰分含量显著或极显著小于A×A和B×B群体。由此可见,杂交配套组合在一定程度上提高了鹅的生长性能、屠宰性能,同时改善了肉品质。

摘  要:
The growth performance at 0-10 weeks of age,slaughter performance,meat quality and chemical indexes of muscle at 70-day-old of Yangzhou geese(A×A and B×B)and their different crossbred combinations(B×A,K×A,D×A and C×A)were measured.The results showed that:slaughter rate and all eviscerated rate of the six groups was85.19%-91.40%,69.12%-74.86%,respectively.The slaughter rate,all eviscerated rate and half-eviscerated rate of K×A group were significantly higher than those of A×A and B×B group(P<0.05).The rate of breast muscle and leg muscle of test groups was higher than that of the control groups A×A and B×B(P<0.05).Live body weight of K×A and B×B group was significantly higher than that of the other four groups(P<0.05).Body weight of six groups reached the maximum value at 4-6weeks.Body weight of K×A and B×B group was significantly higher than the other four groups(P<0.05).The early growth rate of K×A and B×B group was the fastest compared to the other groups.L*and b*value of muscle had no significant difference.The pH value of breast and leg muscle of K×A group was significantly lower than that of A×A group(P<0.05 or P<0.01).The water content of breast and leg muscle had no significant difference between male and female geese.The crude protein content of breast muscle of goose in B×A group was significantly higher than that of the other five groups(P<0.05).The crude fat contents of leg muscle of geese in K×A group was significantly lower than that of the other five groups(P<0.05).The crude ash contents of leg muscle of geese in B×A and C×A group was significantly lower than that of A×A and B×B groups(P<0.05 or P<0.01).The study demonstrated that crossbred combination had better growth performance,slaughter performance and meat quality.
