双阳梅花鹿鹿肉营养成分分析

摘  要:
以越冬期成年双阳梅花鹿公鹿背部肌肉为材料,分析了双阳梅花鹿肉的营养成分、氨基酸含量以及脂肪酸含量。结果表明,双阳梅花鹿公鹿背部肌肉水分含量为73.51±1.13%,粗脂肪含量为2.17±0.21%,粗蛋白含量为21.03±0.54%,粗灰分含量为1.69±0.06%;必需氨基酸与非必需氨基酸的比值为114.99%;ω-6系与ω-3系脂肪酸的比值为13.45:1。

摘  要:
Content of nutrient components,amino acid and fatty acid in muscle of Shuangyang adult male Sika deer was analysed.The results showed that nutrient component content in dorsal muscle of Shuangyang Sika deer was as follow:moisture content was 73.51 ± 1.13%,ether extract content was 2.17 ± 0.21%,crude protein content was 21.03 ± 0.54%,and crude ash content was 1.69± 0.06%; The ratio of essential amino acids to non-essential amino acid was 114.99%; The ratio of ω-6 to ω-3 was 13.45:1.
