添加乳酸菌和米糠对茭白鞘叶青贮品质的影响

摘  要:
本文旨在研究乳酸菌、米糠、和水分添加量对青贮茭白鞘叶质量的影响。采用L9(34)正交试验设计,茭白鞘叶青贮时,分别添加乳酸菌(0、2×105、4×105CFU/kg)、米糠(0、2%、4%DM)和水(0、7.5%、15%DM),贮存60 d后,感官评定茭白鞘叶的青贮质量,测定浸提液的p H值、氨态氮和有机酸的含量。结果表明:乳酸菌的添加提高了青贮发酵的感官评定等级(P<0.05),米糠和水分含量对青贮发酵的感官评定无影响(P>0.05);各处理组之间p H值和氨态氮占总氮比差异均不显著(P>0.05);乳酸菌的添加提高了乙酸和丙酸的浓度(P<0.05);米糠的添加提高了丙酸的浓度(P<0.05);乳酸浓度、丁酸浓度和乳酸占总酸比各处理之间差异不显著(P>0.05)。综上所述,茭白鞘叶在无任何添加剂的情况下,也可以青贮,但是青贮质量一般。乳酸菌的添加显著提高了青贮品质,利于提高青贮发酵的有氧稳定性;米糠的添加量为2%~4%时,提高了青贮品质,但是未达到显著水平;茭白鞘叶水分含量在63%~71%之间时对青贮质量无显著影响。

摘  要:
The objective of this study was to evaluate the effects of lactic acid bacteria, rice bran, and water percentage on the silage quality of few-flower wild rice leaf sheath. Orthogonal experiment design L9(34)was used.Lactic acid bacteria(0, 2 ×105, 4×105CFU·g-1)、rice bran(0, 2%, 4% DM), and water(0, 7.5%, 15% DM) were supplied when the silage prepared. After 60 days of ensiling, the quality of silage was evaluated by sensory evaluation;p H, ammonia-N and organic acid of fermented juice were detected. Results showed that, lactic acid bacteria supplementation improved the silage quality(P <0.05), while the rice bran and water supplementation had no effect on the silage quality(P >0.05); the p H was not affected by additives(P >0.05). Lactic acid bacteria supplementation increased the acetic acid and propionic acid concentration( P <0.05). Rice bran supplementation increased the propionic acid concentration(P <0.05). Concentration of lactic acid and butyrate acid, the ratio of lactic acid to total organic acid were not affected by the additives(P>0.05). The results indicated that few-flower wild rice could ensilage with general quality, even without additives. The lactic acid supplementation improved the silage quality, while the rice bran(2% and 4%) and water supplementation(7.5% and 15%) has no effect on the silage quality.
