壳聚糖和丁酰肼对滑菇保鲜效果的影响

摘  要:
以滑菇(Pholiota nameko)失重率、细胞渗透率、呼吸强度、多酚氧化酶含量及感官评价为指标,研究单一和复合保鲜剂对滑菇保鲜效果的影响。结果表明:单一保鲜剂壳聚糖(使用浓度0.2 g·kg~(-1)或0.3 g·kg~(-1))和丁酰肼(使用浓度1 mg·kg~(-1)或2 mg·kg~(-1))对滑菇保鲜作用较好;在4种配方中,效果最好的复合保鲜剂的最佳配比为:壳聚糖0.3 g·kg~(-1),丁酰肼2 mg·kg~(-1)。

摘  要:
The effect of single and composite preservative on post-harvest fresh-keeping of Pholiota nameko was studied by determining the loss rate, cell permeability, respiratory intensity, total polyphenols content and sensory evaluation score. The results showed that 0.2 g·kg~(-1)and 0.3 g·kg~(-1)chitosan, 1 mg·kg~(-1)and 2 mg·kg~(-1)daminozide had the better preservation effect on the fruiting body of P. nameko. The optimum formula of composite preservative contains 0.3 g·kg~(-1)chitosan and 2 mg·kg~(-1)daminozide.
