微孔保鲜膜对金铃大枣贮藏过程中生理变化的影响

摘  要:
研究了金铃大枣在微孔膜、(0±0.5)℃贮藏条件下几种生理活性物质的变化。结果表明:微孔膜贮藏金铃大枣对可溶性固形物含量没有显著影响,但在Vc含量、多聚半乳糖醛酸酶(PG)活性、丙二醛(MDA)含量方面影响显著,有利于保持枣果的硬度和Vc、延缓衰老过程。

摘  要:
The bioactivities changes of Jinling big jujube packed by microporous preservative film and stored at(0±0.5)℃ were studied in this paper.The results showed that:while fresh-keeping and stored,the soluble solids content of Jinling big jujube changed little,but its content of Vc, MDA and polygalacturonase activity changed remarkably.These will be of great advantage to matain the rigidity and Vc content of Jinling big jujube,as well as postpone its aging process.
