陇东胡麻油基本品质分析

摘  要:
参比市售菜籽油和花生油,采用国标法对陇东胡麻油基本品质进行分析,对油脂碘值、过氧化值、酸价、皂化价等基本指标进行测定分析,研究胡麻油的优良品质。试验结果表明,胡麻油较其它两种油品具有较好的碘值,达204.25g/100g;其酸价1.506mg/g、皂化值0.126mg/g、过氧化值0.099meq/kg,含有大量不饱和脂肪酸,具有较好营养价值和开发前景。在今后应进一步改进试验,以测定胡麻油中不饱和脂肪酸中的α-亚麻酸、亚油酸等脂肪酸成分组成的含量和比例,确定其品质特性。

摘  要:
Referencing commercial rapeseed oil and peanut oil,the basic quality analysis of Longdong linseed oil was studied by using the national standard methods for oil.The basic indicators including fat iodine value,peroxide value,acid value,and saponification value were measured to research the quality of linseed oil.The results showed that linseed oil was better than the other two oil,with iodine value204.25 g /100 g,acid value 1.506 mg / g,saponification value 0.126 mg / g,and peroxide value 0.099 meq / kg,and rich in unsaturated fatty acids,which had good nutritional value and development prospects.The trials should be improved in the future to determine the composition and proportion of unsaturated fatty acids in linseed oil such as the α-linolenic acid,linoleic acid and other fatty acid.
