猪通脊肉干燥模型建立与试验

摘  要:
研究了猪通脊肉热风干燥特性。试验气流速度分别为1.0、1.5和2.0m/s,温度分别为40、50和60℃。结果表明猪通脊肉干燥为单一降率干燥过程。通过对干燥速率随含水量和时间的变化关系的分析,提出了相应的干燥速率模型。用10种模型对干燥曲线进行了模拟,得出改良Henderson-Pabis模型最为适合。

摘  要:
The drying behavior of pork tenderloin in the flow direction of hot air was investigated. The air passed through the column chamber at variety of flow rates (1.0, 1.5 and 2.0 m/s) and temperatures (40, 50 and 60℃). The experiments showed that there is no constant drying rate period in the drying process. The variations of drying rates with time and moisture content were analyzed, and the corresponding models were proposed. The simulation of drying curves with 10 models showed that the model of modified Henderson-Pabis was the most suitable one.
