研究抗氧化肽His-Asp-His-Pro-Val-Cys(HDHPVC)、His-Glu-Lys-Val-Cys(HEKVC)和谷胱甘肽(glutathione,GSH)清除1,1-二苯基-2-三硝基苯肼(1,1-diphenyl-2-picrylhydrazyl,DPPH)自由基的反应动力学特性。3种抗氧化肽的二级反应动力学常数k2、抗氧化还原能力(antiradical power,ARP)及化学计量数等结果表明,其清除DPPH自由基能力的排列顺序为HEKVC

摘 要:
The kinetic behavior of two antioxidative peptides, His-Asp-His-Pro-Val-Cys(HDHPVC) and His-Glu-LysVal-Cys(HEKVC), as well as glutathione(GSH) for their DPPH radical scavenging activity was investigated. Three kinetic parameters of the two antioxidative peptides, including second-order rate constant(k2), antiradical power(ARP) and stoichiometry were calculated and compared with those of GSH. Results showed that the antioxidative capacity was sequenced as HEKVC
