“黑美人”马铃薯研究现状及开发利用

"黑美人"马铃薯因独特的营养功能,在食品、化妆品、保健品和医药等领域有广泛的开发应用价值,种质资源创新利用、提取花青素及主食化产品开发是其主要开发利用途径。"黑美人"马铃薯花青素的高效提取和高纯度制备技术开发、花青素组分及生理活性研究、花青素相关产品加工技术研究及产业化开发、以"黑美人"马铃薯全粉为基料的主食化产品加工技术研究及产业化开发是今后的研究方向。

摘  要:
Due to nique nutritional and health care effectiveness and advantages of ‘Black beauty'potato,there are extensive development and application prices in food,cosmetic,health product,and medicines. Innovative utilization of germplasm resources,extraction of anthocyanin and main grain-based product development is its main development and utilization route. Development of high efficiency extraction and high purity preparation of potato anthocyanin,study on anthocyanin components and physiological activities,study on processing technology and industrial development of anthocyanin related products,study on processing technology and industrial development of main grain products based on‘Black beauty' potato powder are research directions.
