滩涂高粱酒品质分析

摘  要:
经品评滩涂高粱酒分为一级酒和二级酒,并对普通高粱酒、滩涂高粱酒一级酒和二级酒的品质进行了分析。结果表明,滩涂高粱一级白酒中不含甜蜜素,滩涂高粱二级白酒和普通高粱酒中含有少量的甜蜜素。采用气相色谱法对这3种酒样的挥发性物质进行检测,主要为酸类物质、醇类物质和酯类物质,其中己酸、乙酸、丁酸为主要的酸类物质,正丙醇、正丁醇、异戊醇为主要的醇类物质,己酸乙酯、乙酸乙酯、乳酸乙酯为主要的酯类物质。总的来说,滩涂高粱二级酒中的酸类物质、醇类物质和酯类物质含量均大于普通高粱酒中这些物质的含量,而滩涂高粱一级酒中的酸类物质、醇类物质和酯类物质含量最少。

摘  要:
Tidal flat growing sorghum liquor was divided into first-grade and second-grade liquor after evaluation, and the quality of ordinary sorghum wine, first-grade wine and second-grade wine on the tidal flat growing sorghum wine was analyzed. The results showed that the first-grade liquor does not contain cyclamate, the second-grade liquor and the original wine contain a small amount of cyclamate. The volatile flavoring compounds in three kinds of liquor were detected by gas chromatography. These volatile components were mainly divided into three types: alcohols,acids and esters.Among them, hexanoic acid, acetic acid and butyric acid were the main acids, n-propanol, n-butyl alcohol and isoamyl alcohol were the main alcohols, and ethyl hexanoate, ethyl acetate and ethyl lactate were the main esters.In general, the contents of acids, alcohols and esters the second-class liquor were higher than those in ordinary sorghum wine, while those in the first-class liquor were the least.
