套袋对新红星苹果贮藏过程中香气物质的影响

摘  要:
采用静态顶空(SHS)和气相色谱-质谱联用(GC-MS)技术,分析了新红星苹果0℃贮藏过程中香气成分的变化。结果表明(1)套双层袋新红星苹果采收时测定的香气有5类39种,套单层袋新红星苹果采收时测定的香气有4类46种,而不套袋新红星苹果的香气4类51种;(2)0℃贮藏下随着时间的延长套袋和不套袋果实香气物质的相对百分含量均高于采收时,套袋果实以贮藏45 d时最高平均为99.16%,不套袋苹果香气物质的相对百分含量以贮藏90 d时最高为99.57%。(3)套袋果实香气物质种类呈先升后降趋势,对照果实香气物质种类呈先降后升趋势。(4)采收和贮藏前期套袋果实的特征香气相对百分含量没有比对照明显降低,贮藏90 d时套袋果实特征香气的相对百分含量显著低于对照。

摘  要:
The aromatic components of Starkrimson apples that stored in 0℃ were examined by SHS(Static Headspace)GC-MS method.Results showed that:(1)There were 5 categories and 39 kinds of volatile in Starkrimson bagged double layer bagges,and 4 categories and 46 kinds of volatiles in Starkrimson bagged monolayer bages while 4 categories and 51 kinds of volatile in Starkrimson not bagged.(2) The relative content of volatile in storage were all heigher than tlat of harvesting time,and bagged apples reached to the heighest 99.16% in 45 days,while unbagged reached to the heighest 99.57% in 90 days.(3)The varieties of volatile that bagged apperrd up and down trend,while unbagged starkrimson were on the contrary.(4) At harvest time and the beginning of storage,the character volatile of bagged starkrimson was not significantly lower than that of control,while the character volatile of starkrimson were significantly wetgher than that of control.
