水分含量对无核白葡萄干贮期品质及生理变化的影响

摘  要:
【目的】筛选适宜无核白葡萄干贮藏的水分含量。【方法】设置16%、14%、12%、10%四个不同水分含量,分析无核白葡萄干贮期的呼吸强度、乙烯释放量、可溶性糖含量、可滴定酸含量、VC含量等6个生理和品质指标的变化。【结果】水分含量直接影响无核白葡萄干的贮藏效果,当水分含量为12%时,能有效抑制无核白葡萄干的呼吸和乙烯释放,糖、酸等营养成分消耗略低,VC含量下降也较为缓慢。水分含量为14%~16%,无核白葡萄干乙烯释放量和呼吸作用较强,不利于贮藏;而水分含量为10%,元核白葡萄干的口感、风味变差,不利于加工处理。【结论】无核白葡萄干贮藏时,水分含量为12%能获得较好的贮藏效果。

摘  要:
【Objective】 This experiment is designed to select the appropriate moisture content for storing seedless raisins.【Method】 Four different moisture contents were set,which were 16%,14%,12%and10%.They were used to analyze the change of 6 physiological and quality indicators,such as respiration rate and ethylene production,total sugar content,total acid content and vitamin C content etc.【Result】The results showed that the moisture content of samples affected the storage effectiveness directly.The moisture content of 12%during the storage of seedless raisins could effectively inhibit respiration and ethylene release,sugar and acids,and other nutrients consumed slightly lower,such as vitamin C and soluble solids content.When moisture content was 14%-16%,it was not conducive to store seedless raisins because of seedless raisins ethylene production and respiration was stronger;while the moisture content was 10%,it was unfavorable for processing due to seedless raisins taste and flavor variation.【Conclusion】In order to obtain better storage effectiveness of seedless raisins,12%moisture content storage reached better result for storing seedless raisin.
