不同pH值5-氨基乙酰丙酸溶液对日光温室克瑞森无核葡萄着色和品质的影响

摘  要:
为了研究不同pH值的5-氨基乙酰丙酸(ALA)对克瑞森无核葡萄着色和果实品质的影响,以日光温室内克瑞森葡萄为试材,在葡萄膨大期和转色期对果穗和叶片进行清水(pH=7.0)和不同pH值(5.5、6.0、6.5、7.0)的ALA溶液喷施处理.结果表明,不同pH值的ALA溶液均可不同程度地提高葡萄颜色组分(a*)、色泽饱和度(C*)、颜色指数(CIRG)以及可溶性糖、可溶性固形物、叶绿素、类胡萝卜素以及花青素含量,降低葡萄色泽明亮度(L*)、颜色组分(b*)、色度角(h°)以及可滴定酸含量,不同pH值的ALA处理作用效果排序为pH=5.5>pH=6.0>pH=6.5>pH=7.0>清水.其中,pH值为5.5的ALA作用效果最为明显,说明pH值越低,ALA越稳定,作用效果越显著,越能提前促进果实着色和成熟.通过相关性分析可知,pH值为5.5的ALA处理中花青素含量与各颜色指标、可溶性糖以及可溶性固形物含量之间存在显著的相关关系.

摘  要:
In order to study the effects of different pH values of 5-aminolevulinic acid(ALA)on the coloration and fruit quality of Crimson grapes.We used Crimson grapes in the solar greenhouse as test materials.We sprayed the ALA solution with water(pH=7.0) and different pH values(5.5,6.0,6.5,7.0) on the ears and leaves during the period of grape expansion and color change.The results showed that different pH values of ALA solution increased grape color component(a~*),color saturation(C~*),color index(CIRG) and soluble sugar,soluble solids,chlorophyll and carotenoid to varying degrees.And anthocyanin content,at the same time,it reduced the grape color brightness(L~*),color component(b~*),chromaticity angle(h°) and titratable acid content.The ALA treatment effect of different pH values is sorted as pH=5.5>pH=6.0>pH=6.5>pH=7.0>clear water.Among them,the effect of ALA with pH value of 5.5 is the most obvious,it indicated that the lower the pH value,the more stable the ALA,the more significant the effect,the more the fruit coloring and maturation can be promoted in advance.The analysis of correlation showed that there was a significant correlation between anthocyanin content and various color indicators,soluble sugars and soluble solids content in ALA treatment with pH value of 5.5.
