68个去皮和带皮豆粕的常规营养、脲酶活性及蛋白质溶解度比较研究

摘  要:
采集来源于美国、巴西、中国的11个去皮豆粕和中国51个大、中、小型企业加工的57个带皮豆粕,有代表性地 比较其营养和品质。结果显示:去皮豆粕优于带皮豆粕,去皮豆粕的粗蛋白质、总能值、蛋白质溶解度(在0. 2%KOH 溶液中)分别为46. 72%、17. 11 MJ/kg、81. 31%,分别比带皮豆粕高1. 64%、0. 03MJ/kg 和12. 88%(P<0. 01) ;而粗纤维和 NDF 含量分别为3. 49%和7. 74%,比带皮豆粕低1. 16%和2. 19%(P<0. 05) 。对相同大豆来源、相同工艺的4个配对 去皮和带皮豆粕进行比较,去皮加工使豆粕的粗蛋白质、总能值和蛋白质溶解度分别提高2. 34%、0. 08MJ/kg 和4. 14%;使袒纤维和 NDF 分别降低0. 93%、1. 19%。去皮工艺改善了豆粕的营养和品质,粗蛋白质、粗纤维、NDF、总能值 和蛋白质溶解度是反映去皮工艺对豆粕营养品质影响的敏感指标。

摘  要:
The samples were collected for analyzing:11 dehulled soybean meals were from America,Brazil and China;57 regular soybean meals from thirteen provinces or cities that soybean from America,Brazil,Argentina and China.The results showed that:on the average,there were significant difference in crude protein,total energy and protein solubility in potassium hydroxide(P<0. 01) .The compositions of crude protein,total energy and protein solubility in potassi- um hydroxide(standardized DM 88%)were 46. 72%,17. 11 MJ/kg and 81. 31%,respectively;and were higher 1. 64%,0. 03 MJ/kg and 12. 88% than that of regular soybean meals(P<0. 01) ,respectively.The crude fiber and NDF were 3. 49% and 7. 74%,respectively;and were higher 1. 16% and 2. 19%(P<0. 05) than that of regular soybean meals.
