酉州乌羊与本地其他山羊肉品质特性比较

摘  要:
为了比较酉州乌羊与本地其他山羊群体的肉品质特性,试验随机选择6月龄酉州乌羊、本地白山羊和波杂羊公羔羊各3只,屠宰后进行肌肉营养成分的测定。结果表明:粗蛋白、胆固醇、总脂肪和灰分在三个群体肌肉中的含量差异不显著(P>0.05);除胱氨酸和组氨酸之外的其他氨基酸均在酉州乌羊肌肉中的含量最高,其中蛋氨酸、亮氨酸和谷氨酸的含量显著高于本地白山羊(P<0.05);三个群体羊肉棕榈酸、硬脂酸和油酸的含量及其占肌内脂肪的相对含量差异不显著(P>0.05);镁元素在波杂羊和酉州乌羊肌肉中的含量显著高于本地白山羊(P<0.05),硒元素和锌元素在酉州乌羊肌肉中含量最高。说明酉州乌羊是高营养价值的肉用山羊品种。

摘  要:
In order to compare meat quality characteristics between Youzhou Black goat and other local goat breeds,each three of Youzhou Black goats,local White goats and Boer crossbred goats with the age of 6 months,were randomly chosen in this experiment,and the nutritional components were determined after the slaughter. The results showed that the contents of crude protein,cholesterol,total fat and ash in muscle had no significant difference( P>0. 05) among the three goat breeds. The contents of amino acids except cystine and histidine,were the highest in muscle of Youzhou Black goat,in which the values of methionine,leucine and glutamic acid were significantly higher than those in local White goat( P<0. 05). The contents of palmitic acid,stearic acid and oleic acid in muscle and the ratios of those values to intramuscular fat had no significant difference( P>0. 05) among the three goat breeds. Magnesium element contents in muscle of Boer crossbred goat and Youzhou Black goat was significantly higher than that in local White goat( P<0. 05),while the contents of selenium and zinc elements were the highest in muscle of Youzhou Black goat. The results suggested that Youzhou Black goat is a meat goat breed of being high nutritional value.
