摘 要：
为了科学评价茶叶初加工企业的清洁化水平,文章依据"非强制性、相关性、差异性"原则,从茶叶清洁化的相关要求中筛选出加工厂功能区、车间装饰材料、清洁卫生、加工设备、茶叶和人员等6个方面15个评价指标,采用层次分析法(AHP)构建了指标层次结构,通过专家意见咨询获取了各指标权重,采用分级综合评分法、百分制评分法和一票否决法对不同特性指标进行赋分,并确定了五个等级的划分标准,由此构建了完整的茶叶初加工企业清洁化等级评价体系。随之,将构建的评价体系应用于山东24家茶叶初加工企业清洁化等级评价,结果表明,因条件受限不能参评的茶企占2/3,参评茶企的清洁化等级为2A～4A,其中3A占62.5%。

摘 要：
In order to evaluate the cleanliness level of tea primary processing factories scientifically, 15 evaluation indexes were selected from 6 aspects including processing plant functional area, workshop decoration material, cleaning sanitation, processing equipment, fresh leaves and personnel based on the principle of "non coercive, correlation and difference". Then, the index hierarchy was constructed by AHP, and the weight of each index was obtained according to expert advice. Graded comprehensive scoring method, percentile scoring method and one-vote veto were used to assign different characteristic indexes, then five levels were determined, thus a cleanliness evaluation system for primary tea processing factories was built up. Subsequently the cleanliness evaluation system was applied to evaluate the cleanliness grade of 24 tea primary processing factories in Shandong Province. As a result, 2/3 of the tea primary processing factories were unable to participate in the assessment because of limited conditions, and the cleanliness grade of the other tea primary processing enterprises were 2A～4A,among which 3A accounted for 62.5%.
