为了提高西式烟熏香肠的产品质量,通过对其加工流程中可能产生的危害(HA)进行分析,找出控制的关键点(CCP),并制定相应的解决措施。并通过在生产过程中对危害的有效控制,从而确保西式烟熏香肠的安全性。

In order to guarantee the quality of the western smoking sausage,the paper analyzed potential hazards according to its processing,and identified critical control points,and established the methods,which can guarantee the safety of the western smoked sausage.
