摘 要:
以杏粉及杏皮渣膳食纤维为主要原料,研究杏皮渣膳食纤维固体饮料的生产工艺,通过单因素和正交试验分析,确定杏皮渣膳食纤维固体饮料最佳配方:杏粉添加量8.00g,杏皮渣膳食纤维粉添加量2.00g,粒度140目,CMC-Na添加量为0.300g,黄原胶添加量为0.25g,果胶添加量为0.15g,木糖醇添加量6.00g,柠檬酸添加量0.08g,食盐添加量0.30g。该产品杏皮渣膳食纤维含量高达11%,属于高纤维、低热量、低脂肪的健康食品。

摘 要:
The purpose of this research was to reveal the productive technology of mixed solid beverage made from apricot dregs by using almond powder and dietary fiber as the main materials.Through the single factor and orthogonal experimental analysis,the best formulation of mixed solid beverage of dietary fiber from apricot is finally determined:almond powder is 8.00 g,dietary fiber is 2.00 g,CMC-Na is 0.30 g,xanthan gum is 0.25 g,pectin is 0.15 g,xylitol is 6.00 g,citric acid is 0.10 g,salt is 0.30 g.The product is rich in the dietary fiber of apricot,the content is up to 11%,which belongs to the high fiber,low calorie,low fat healthy food.
