摘 要:
[目的]优化芥菜芽苗发芽条件以富集异硫氰酸盐含量.[方法]以芥菜为试材,通过单因素试验和响应面试验研究发芽时间、光照时间和发芽温度对芥菜中异硫氰酸酯含量的影响并对其进行优化.[结果]建立的回归模型显著,可用于预测异硫氰酸酯富集培养条件,各因素对芥菜中异硫氰酸酯含量影响为发芽时间>光照时间>发芽温度,经模型预测并验证得到芥菜发芽富集异硫氰酸酯的最佳条件为发芽时间4.8 d、光照时间17.4 h、发芽温度30.7℃,在该条件下芥菜中异硫氰酸酯含量可达(721.9±8.9)mg/kg.[结论]该研究结果为芥菜芽苗类功能食品的开发利用提供了参考.

摘 要:
[Objective] The aim was to optimize germination conditions for accumulating isothiocyanates in germinated Brassica juncea.[Method]The effects of germination time,light time and germination temperature on the accumulation of isothiocyanates in germinated Brassica juncea were studied.[Result] The factors arranged in important order as followed: germination time,light time and germination temperature. The optimum conditions for accumulating isothiocyanates in germinated Brassica juncea were germination time of 4. 8 d,light time of 17. 4 h and germination temperature of 30. 7 ℃. Under the optimal conditions,the predicted highest content of isothiocyanates in germinated mustard was( 721. 9 ± 8. 9) mg/kg.[Conclusion]The result provides reference for development and utilization of functional food of mustard sprout.
