摘 要:
The contents of soluble sugar?starch?pectin?crude fibre?crude protein?minerals(calcium?phosphorus?magnesium?zinc)and vitamins(Vc?β-carotene)of six cultivars of pumpkin fruit in Inner Mongolia area was stuelied.The results showed the contents of soluble sugar?pectin and β-carotene was high,β-carotenet content of Hong Pi pumpkin(C.maxima Duch.)was the highest among six cultivars,was 34.22mg/100g FW.Pectin content of Lu Pi pumpkin(C.maxima Duch.)was highest among six cultivars,was 2.03mg/100g FW.Nutrient contents of three cultivars (C.maxima Duch.) were higher than three cultivars (C.moschata Duch.).
