摘  要:
Pullulan,a kind of exopolysaccharides produced by Aureobasidium pullulans,has a number of favorable performances such as film-forming ,high adhesion,low digestibility,nontoxicity etc.,and is widely used in food ,pharmaceutical,chemical industry,petrochemistry,light industry and other manufacture industries.Therefore,it has been paid great attention by scientists and enterprisers.This article gave a brief summary of the molecular structure biological character of pullulan and the effection of frementing were intrduced ,Applications food industry of pullulan were also described .
