不同类型冠突散囊菌对茯砖散茶主要化学成分的影响

摘  要:
为探明4个不同类型的冠突散囊菌(G1、G2、G3、G4)对茯砖散茶中主要化学成分的影响,以期寻找出能制得最佳茯砖散茶的优势菌种。比较4个不同类型冠突散囊菌在接种3、7、11天后的EGCG、咖啡碱、茶氨酸、茶多酚、可溶性糖、水浸出物、氟含量等化学指标的变化情况。在分别接种3天、7天和11天后,G2接种处理后的茯砖散茶各指标较其他处理表现出一定的优势。其中EGCG、茶氨酸、茶多酚含量均高于其他3个处理,且EGCG含量G2与G3、G4存在显著性差异;咖啡碱含量较低;可溶性糖含量略低于其他3个处理。综合来看,G2接种后的茯砖散茶表现为最佳,适合推广。

摘  要:
The aim was to find out the superiority strain to the best system of brick loose tea, four different types of Eurotium cristatum (G1, G2, G3, G4) were investigated, and study the influence to the main chemical composition of the brick loose tea. After inoculated of 3, 7, 11 days, comparison the chemical index changes of EGCG, caffeine, theanine, tea polyphenol, soluble sugar, water extract, fluorine content in the brick loose tea, respectively. After vaccinated of 3, 7, 11 days, the treatment of G2 brick loose tea was better than others. The EGCG, theanine, tea polyphenol content in it were higher than others. There was a significant difference about the content of EGCG between G2 and G3, G2 and G4. But the caffeine content was the least; soluble sugar content was slightly lower than others. Taken together, these results suggested that the treatment of G2 brick loose tea was the best, suitable generalization and application.
