河南斗鸡蛋品质分析

摘  要：
为了研究河南斗鸡蛋的蛋品质,本试验对河南斗鸡蛋物理指标进行测定并与普通的褐壳蛋进行了对比分析;同时,对河南斗鸡蛋的粗脂肪、粗蛋白、胆固醇和17种氨基酸的含量进行了测定。试验结果表明:河南斗鸡蛋的相对密度、蛋壳强度、蛋黄比率、蛋黄颜色极显著高于褐壳蛋(P<0.01);河南斗鸡蛋蛋重、蛋壳比率、蛋白比率极显著低于褐壳蛋(P<0.01);河南斗鸡蛋哈氏单位显著低于褐壳蛋(P<0.05);河南斗鸡蛋与褐壳蛋的蛋壳厚度和蛋形指数差异不显著(P>0.05)。河南斗鸡蛋全蛋中粗蛋白平均为13.62%,蛋黄中粗脂肪平均为17.18%,蛋黄中胆固醇含量平均为15.72g/kg。17种氨基酸含量均较高,氨基酸总和达到13.85%。对河南斗鸡蛋品质的研究,将有利于河南斗鸡蛋的开发利用。

摘  要：
To study the egg quality of Henan Game Chicken,the physical index of Henan Game Chicken eggs are measured and compared with those of brown shell eggs.Meanwhile,the crude protein,cholesterol,and 17 kinds of amino acids in the eggs of Henan Game Chicken are determined.The results show that the relative density,eggshell strength,yolk ratio and yolk color are higher than that of brown shell eggs;the egg weight,eggshell ratio,protein ratio and Haugh unit are lower than that of brown shell eggs.There is no significant difference in eggshell thickness and egg shape index between Henan Game Chicken eggs and brown shell eggs(P>0.05).The average content of crude protein in the whole egg of Henan Game Chicken eggs is 13.62%,and the average content of crude fat and cholesterol in yolk is17.18%and 15.72g/kg.The contents of 17 kinds of amino acids are higher,the total amino acids reached13.85%.The analysis of the quality of Henan Game Chicken eggs will be beneficial to the development and utilization of Henan Game Chicken eggs.
