冰温贮藏对草鱼鱼糜脂肪氧化和质构变化的效应

摘  要:
为了改善淡水鱼鱼糜的质构及凝胶劣化,延长其保鲜期,以草鱼为研究对象,对草鱼鱼糜进行冰点调节,然后冰温贮藏,研究贮藏期间其质构和脂肪氧化的变化,以冷藏和冷冻贮藏为对照。结果表明,冰温贮藏[(-1.50±0.03)℃]相对于冷藏,可以显著抑制草鱼鱼糜的脂肪氧化;冷藏处理组在第4周已经明显可见鱼糜表面略微发黏,色泽发暗,并有轻微的异味,而冰温处理组感官特征没有显著的变化;冰温贮藏相对于冷冻贮藏,可以显著降低草鱼鱼糜的蒸煮损失率,改善持水和保水性,使其保持良好的弹性、黏聚性、咀嚼性以及适度的剪切力,从而保证了草鱼鱼糜良好的质构。

摘  要:
In order to extend the shelf-life and improve the gel properties of freshwater fish surimi,taking grass carp as study material,the surimi was then stored at ice-temperature after adjusting the ice point to study the changes of texture and lipid oxidation during storage with refrigerated and frozen samples as control.The results indicated that the lipid oxidation of grass carp surimi could be significantly inhibited during ice-temperature storage [(-1.5±0.03)℃] compared to the refrigerated samples.There was no significant change in the sensory characteristics of ice-temperature stored group in the fourth week while refrigerated samples had slightly sticky,dark color on surimi surface and slight smell.Compared to frozen storage,ice-temperature storage could significantly reduce the cooking loss of grass carp surimi,improve the water retention,increase the flexibility,adhesiveness and mastication,and keep moderate hardness and shear force to ensure the good texture quality.
