对全国已有主栽品种进行调查研究,分析了这些彩色马铃薯的营养成分及功能活性物质。在此基础上,对我国彩色马铃薯的发展现状及存在的主要问题进行梳理,并对未来彩色马铃薯综合利用及附加值提升进行展望,为其精深加工提供参考。

摘  要:
The present study investigated the main cultivars of colored fleshed potatoes in China,and analyzed their nutrients and bioactive compounds. On the basis,the development status and main problems of colored fleshed potatoes in China were reviewed,and its comprehensive utilization and value-added enhancement in the future were prospected to provide reference for further processing.
