摘 要:
利用双螺杆挤压技术制备南极磷虾粉,采用国标方法分析其营养成分,并与船产南极磷虾粉的营养价值进行了比较,包括船产南极磷虾粉和双螺杆挤压方法制备南极磷虾粉的得率、常规营养组分、氨基酸、脂肪酸以及矿物质和微量元素。结果表明:在3种加工方法(其中双螺杆挤压法分别采用两种前处理法)中,两种双螺杆挤压方法制得的虾粉与船产南极磷虾粉的得率、氨基酸、脂肪酸组成及矿物质和微量元素含量差异较显著;但采用双螺杆挤压经两种不同前处理方法分别制得的南极磷虾粉的得率、氨基酸、脂肪酸组成及矿物质和微量元素含量差异不显著。这可能为所用原料基础特性差异不同所致。本文探索了双螺杆挤压技术应用于南极磷虾粉生产的可行性,也为"低温"南极磷虾粉的制备提供了新的思路。

摘 要:
Antarctic krill( Euphausia superba) plays a central role in the Antarctic ocean ecosystem.Antarctic krill has the largest biomass of any multi-cellular animal species on earth. It has attracted more and more attention for its large biomass and potential value in recent years. Antarctic krill powder is one of the main products produced onboard. To explore the new technology of Antarctic krill powder production,twinscrew extrude technique was introduced. Frozen Antarctic krill were chosen according to the processing technology,main parameters of Antarctic krill powder produced onboard,the nutritional components and value of Antarctic krill powder produced onboard and produced by twin-screw extrude were analyzed. The national standard methods were adopted. The yield,main nutritional components,amino acid,fatty acid,mineral and trace element of Antarctic krill powder produced onboard and produced by twin-screw extrude were compared. The yield of Antarctic krill powder produced onboard,Antarctic krill powder produced extrude( heat treatment) and Antarctic krill powder produced extrude( no heat treatment) were 9. 1%,15. 9% and 14. 8%,respectively. The results showed that significant differences existed in the yield,main nutritional components,amino acid,fatty acid,mineral and trace element of Antarctic krill powder produced onboard and produced by twin-screw extrude. However,there was no significant difference in the yield,main nutritional components,amino acid,fatty acid,mineral and trace element of Antarctic krill powder produced by twin-screw extrude. The result may be related to the fundamental properties of Antarctic krill used. These results demonstrated that Antarctic krill powder produced extrude( no heat treatment) may be regarded as the raw material for the extraction of Antarctic krill oil and further processing onland. This method not only avoids the loss of the functional components from Antarctic krill due to too much heating treatment,but also realizes the reduced volumes of the processing of Antarctic krill onboard. In this paper,we explored the feasibility of twin-screw extrude used in the production of Antarctic krill powder. Antarctic krill twin-screw extrude treated reduces the volume and weight of raw material,as well as the costs of storage and transportation. Meanwhile,we put forward a new idea on the production of"low temperature"Antarctic krill powder,which well deserved further exploitation and utilization. However,twin-screw extrude technology applied in the related fields still needs a long way and more further exploration.
