微波膨胀对烟梗致香物质的影响分析

摘  要:
采用微波膨胀处理烟梗,将处理前后的烟梗按常规工艺制成梗丝,分别测定了2种梗丝中的8类77种致香物质并对比分析及感官评吸。结果显示:微波处理烟梗制成的梗丝与常规梗丝相比,醇类和酯类致香物质相对含量无显著性差异;酚类和烯烃类有显著性差异,分别为-10.98%和10.33%;醛类、酮类、酸类和杂环类存在极显著性差异,分别为27.54%、12.99%、39.15%和30.83%;感官品质明显改善。

摘  要:
Using microwave expansion treatment tobacco stem, before and after the treatment tobacco stem were made cut stems according to the conventional process, 8 class 77 kinds of the aroma components of two kinds of cut stems were determined respectively and analyzed comparatively, and the smoking quality of two kinds of cut stems were evaluated. The results showed that: compared to cut stems made of microwave treatment tobacco stem and by conventional process, alcohols and esters of the aroma components relative content had no significant difference. Phenolic and olefin hydrocarbon had significant difference, respectively was -10.98% and 10.33% . Aldehydes, ketones, acids and heterocyclic existed significantly difference, respectively was 27.54%, 12.99%, 39.15% and 30.83%. The smoking quality was improved obviously.
