干鲜状态鹿角灵芝中营养成分分析与质量比较

摘  要:
鹿角灵芝具有调节人体机能的作用,对干鲜状态下鹿角灵芝的基本营养成分(蛋白质、脂肪、总糖、粗纤维)、矿物质元素、氨基酸等进行营养成分的分析和质量的比较,为鹿角灵芝应用提供理论依据。除粗纤维含量外,干鹿角灵芝的蛋白质、脂肪、总糖含量略低于鲜鹿角灵芝;干鹿角灵芝矿物质元素(Cu、Zn、Fe、Mn、Ca)含量普遍高于鲜鹿角灵芝。干鹿角灵芝中必需氨基酸占氨基酸总含量的64.05%,必需氨基酸与非必需氨基酸值在1.78,更符合FAO/WHO对理想蛋白质的要求。

摘  要:
Ganoderma lucidum has health-care effects of regulating immune function of human body. In order to pro-vide theoretical basis for its application,this study has been analyzed the basic nutrients(protein,fat,total sugar,andcrude fiber),mineral elements,and amino acids of G.lucidum under dried and fresh conditions,respectively. The pro-tein,fat and total sugar contents of dried Ganoderma lucidum were slightly lower than that of fresh G.lucidum butcrude fiber content. The contents of the mineral elements of dried G.lucidum were generally higher than that of thefresh samples. The essential amino acids in dried G.lucidum was accounted for 64.05% of the content total amino ac-ids,and the ratio essential amino acids and non-essential amino acids was 1.78,which was much more fit the re-quirements of FAO/WHO.
