不同淮山药品种资源营养品质特性分析

摘  要:
[目的]分析不同淮山药品种(资源)的营养品质。[方法]以9个淮山药品种:桂淮2号、桂淮5号、桂淮6号、GY2、GY23、GY47、GY62、GY69和双胞山药为材料,测定他们的水分、粗蛋白、脂肪、氨基酸总量、氨基酸组分及矿物质含量。[结果]在供试品种中,GY2的营养品质较优,除其蛋白质含量排第2外,其总氨基酸、可溶性糖、脂肪、皂甙及各种矿物质含量均居首位;桂淮5号为高蛋白、高锌品种,其蛋白质和锌含量分别为3.03%和4.65 mg/kg;GY23、GY62和GY69为高淀粉品种,其鲜薯淀粉含量分别为22.0%、27.9%和23.4%。[结论]供试淮山药品种的品种特色比较明显,GY2的营养品质较优。

摘  要:
[Objective] The study was to analyze the nutritional quality of different Dioscorea opposita Thunb varieties(resources).[Method] With 9 D.opposita varieties such as Guihuai 2,Guihuai 5,Guihuai 6,GY2,GY23,GY47,GY62,GY69 and double cell Chinese yam as tested materials,their content of water,crude protein,fat,total amino acid,amino acid components and mineral matter content were detected.[Result] In the tested materials,the nutritional quality of GY2 was better,and except its protein content ranks the second,its content of total amino acid,soluble sugar,fat,saponin and each mineral matter all rank the first.Guihuai 5 was the variety with high protein and high Zn,and its content of protein and Zn were 3.03% and 4.65 mg/kg resp.GY23,GY62 and GY69 were high starch varieties,and their starch content in fresh root tubers were 22.0%,27.9% and 23.4% resp.[Conclusion] The variety characteristics of the tested D.opposita varieties were obvious,and the nutritional quality of GY2 was better.
