酿酒葡萄果皮天然色素的提取工艺研究

摘  要:
以酿酒葡萄果皮为原料,在单因素试验基础上,运用正交试验优化提取工艺。结果表明:在提取剂为80%乙醇与0.5%柠檬酸(体积比5∶1)的混合液、料液比为1∶7、pH为3.0、温度为70℃、提取时间为70 min的提取工艺条件下,可以有效地提取葡萄皮中的天然色素。该工艺成本低、操作简单、安全性较高,在工业中有很好的发展前景。

摘  要:
The extraction techniques of pigment from grape peel by solvent method were studied on the basis of single factortest and orthogonal test.The results suggested that the optimal technical condition was as follows: the best extraction technology was extracted solution of 80% ethanol +0.5% citric acid(volume ratio 5∶1) in mixture,the ratio of grape peel and extraction being 1∶7(g/mL),the pH was 3.0,the temperature was 70℃ and the extraction time was 70 min.This extraction technology,taking the ethanol as the extraction solvent,had features of with low cost,easy operation and high safety,and had good prospects for development in the industry.
