不同含水率刀豆的挤压特性及对细胞结构的影响

摘  要:
进行了不同含水率刀豆的挤在试验,得出了其组织在挤压时的力-变形曲线、松弛曲线及其流变学模型。讨论了不同含水率下挤压对其细胞结构的影响以及对于制品复水速率的影响。

摘  要:
In this paper, the squeezing tests on sword bean with different moistures hare been made. The P- A curves, relaxation curves and their rheological models kave been obtained. Then effects of squeezing on the cellular structure and the increase of Rf of dried sword bean hare been discussed.
