富硒荞麦苗中可溶性多糖及其抗氧化性分析

摘  要:
为获得营养及保健功能更优秀的特色食品,将荞麦芽与富硒相结合,采用亚硒酸钠溶液作为富硒原料,以甜、苦2种荞麦苗为研究对象,采用水培富硒法对荞麦进行富硒处理,对富硒后荞麦苗中可溶性多糖含量及其抗氧化性进行研究分析。结果表明:富硒后对甜、苦荞麦苗中可溶性多糖含量影响较小。在生长16d时,甜荞麦苗的可溶性多糖达到最大,提取率为3.3%;苦荞麦苗可溶性多糖提取率为2.69%,在40mg/L亚硒酸钠溶液中进行富硒处理后,甜、苦荞麦苗中可溶性多糖含量增长至3.32%和2.95%。富硒处理对甜、苦荞麦苗中可溶性多糖的·OH抑制率、DPPH·清除率影响较大。其中,甜荞麦苗对亚硒酸钠溶液浓度的耐受性优于苦荞麦苗;其最佳的富硒方案为生长天数18d、亚硒酸钠溶液浓度为40mg/L、荞麦品种为苦荞、20mg/L亚硒酸钠溶液浸种处理。经试验验证,在此最佳组合条件下,可溶性多糖含量为3.92%,·OH抑制率为44.87%,DPPH·清除率65.47%。

摘  要:
The soluble polysaccharide content and its oxidation resistance of Se-enriched common and tartary buckwheat seedlings treated with sodium selenite solution were analyzed to obtain a good special food with high nutrition and healthcare function.Results:Selenium enrichment has little effect on polysaccharide content of buckwheat seedlings.The polysaccharide extraction rate from common and tartary buckwheat seedlings is 3.3% and 2.69% after 16 dseparately.The polysaccharide content of common and tartary buckwheat seedlings treated with 40ml/L of sodium selenite solution grows to 3.32%and 2.95%respectively.Selenium enrichment has the significant effect on inhibition and scavenging ratio of common and tartary buckwheat seedlings against· OH and DPPH ·.The tolerance of common buckwheat seedlings against sodium selenite solution concentration is higher than tartary buckwheat seedlings.The optimum selenium enrichment condition for common buckwheat includes 18 dgrowth period and 40 ml/L of sodium selenite solution.The optimum selenium enrichment condition for tartary buckwheat includes 18 d growth period and 20 ml/L of sodium selenite solution.The polysaccharide content,·OH inhibition ratio and DPPH·scavenging ratio of buckwheat seedlings are 3.92%,44.87%and 65.47% under the optimum selenium enrichment condition respectively.
