猪油油脂产品开发利用研究进展

摘  要:
我国是生猪饲养大国,具有巨大的猪油油脂资源,如何合理利用猪油油脂成为了人们日益研究的课题。本文简要介绍了猪油油脂的特性,猪油油脂的抗氧化研究进展,并对国内外以猪油油脂为原料进行产品开发和利用现状进行了综述,分析了当前应用中存在的问题,并对研究方向进行了展望。

摘  要:
China is a leading pig producer in the world that has a huge lard resource.How to utilize lard rationally has mere asingly become a hot topic among researchers.In this review,physicochemical properties of lard and recent progress made in the study of lard protection against oxidation are described.The current status of the development and utilization of lard products is illustrated,and problems encountered in the application of lard products in the food and biofuel industries are analyzed.Moreover,future research directions are discussed.
