果蔬粉应用现状及存在问题研究

摘  要:
将新鲜果蔬直接加工成果蔬粉,延长了贮藏期,降低了贮藏、运输、包装等费用,拓展了应用范围。因此,日渐成为近年来果蔬加工的热点之一。本文系统阐述了果蔬粉在饮料、食品以及保健品等方面的应用,在前人研究的基础上提出了果蔬粉应用存在的问题,并对果蔬粉的发展前景进行了展望。

摘  要:
The technology of processing fresh fruit and vegetable into powder directly extends the storage period,reduces the loss and costs during postharvest, transportation, packaging, and expands the range of applications. The fruit and vegetable powder is becoming more popular in the processing industry recently. In this paper, the application of fruit and vegetable powder in drink, food, and health care were described., Furthermore,based on the previous studies, the problems and prospects of its application were presented.
