保加利亚乳杆菌冻干工艺中增菌的研究

摘  要:
本研究采用单因素试验和三因素正交试验对流加碱法和缓冲盐法在保加利亚乳杆菌冻干工艺中的增菌效果进行了研究,为保加利亚乳杆菌冻干菌的生产提供参数。结果显示,流加碱法增菌中,50%氨水溶液的增菌效果最好;缓冲盐增菌中,增菌效果最佳优化组合为5%的添加量、pH值为6.2、缓冲盐体系为C6H8O7.H2O-Na3C6H5O7·H2O;综合比较两种增菌方法,流加碱法效果优于缓冲盐法。

摘  要:
In order to research the enrichment effect of convection and soda(20% Na2CO3 solution,50% aqueous ammonia solution,10% NaOH solution) and buffer salt method(pH value(A),additives(B),Different buffer salt(C)) in Bulgaria lactobacillus bacteria effect in the process of lyophilization increase,we can use single factor test and orthogonal test three factors;It will Provide parameters for the production of the freeze-dried bacteria Lactobacillus bulgaricus.The experimental results are: 50% aqueous ammonia solution has the best effect in flow plus soda enrichment;The best optimized combination is 5% volume of addition,pH6.2 buffer salt system C6H8O7 H2ONa3C6H5O7·H2O.Comprehensive comparing two enrichment methods,flow plus enrichment soda the buffered saline law is better than.
