镜鲤(Cyprinus carpio specularis)肌肉营养成分分析及价值评定

摘  要:
为了研究德国镜鲤肌肉营养成分和营养价值。试验按体重规格40-50g/尾和220-230g/尾随机抽样,各规格抽取8尾。试验结果表明:40-50g与220-230g镜鲤肌肉鲜样中粗蛋白含量分别为16.98%,16.76%,粗脂肪分别为0.60%,1.04%。肌肉干物质中必需氨基酸总量分别为34.34%,36.17%,必需氨基酸与氨基酸总量之比分别为68.86%,71.23%,四种呈味氨基酸总量分别为25.75%,25.46%,呈味氨基酸与氨基酸总量之比分别为37.47%,37.16%,支/芳分别为2.26,2.29,必需氨基酸指数分别为77.44,85.34。基本符合WHO/FAO标准,除了赖氨酸比例偏高,其余氨基酸比例较接近鸡蛋蛋白氨基酸模式。

摘  要:
Analysis of nutrient and evaluation of nutritional value on muscle of cyprinus carpio specularis at different growth stages were studied.Two sizes (40-50g and 220-230g weight) of 8 fishes were choose respectively.The results showed that,in fresh muscle,crude protein were 16.98%,16.76%,crude lipid were 0.60%,1.04% respectively;in airdry basis sample,essential amino acid content was 34.34%,36.17%,essential amino acid/total amino acid was 68.86%,71.23%,delicious amino acid content was 37.47%,37.16%,delicious amino acid/ total amino acid was 37.47%,37.16%,F was 2.26,2.29,EAAI was 77.44,85.34 respectively at 40-50g and 220-230g weight.According to AAS and CS,which basically accorded with the issued standard value by FAO and WHO,and the proportion which basically accorded with egg white amino acid model.
