鸽肉的营养成分分析及其评价

摘  要:
对鸽肉中的一般营养成分以及脂肪酸、矿物质和微量元素进行分析。结果表明,鸽肉中含有丰富的营养物质,粗蛋白含量为67.8%,粗脂肪含量为38.8%,其中不饱和脂肪酸含量在65.12%~65.22%之间,油酸含量特别高,占脂肪酸总量的39.93%,矿物质及微量元素高于一般动物性食物。

摘  要:
The contents of general nutrites,fatty acids,mineral and trace elements,in different instars of Columba domesticus were analysed. Result implied it had abundant nutritional material. Columba domesticus data obtained showed that there was a protein content range of 67. 8%,about 38. 8%,however unsaturated fatty acid was high in total fatty acids about 65. 12%~65. 22%,especially oleic,which level was about 39. 93%.The content was higher than those in general animal food,also.
