优质肉鸡肌肉品质的组织学特性研究

摘  要:
采用冰冻切片法,借助TIGER细胞图像分析仪对南海麻黄鸡、江西鸡、黄鸡M系、黄鸡N系、黄鸡K系的胸部肌肉的肌纤维直径和肌纤维密度进行了测定。结果表明:①肌纤维直径由小到大依次为江西鸡(30.1±3.1μm)、南海麻黄鸡(35.3±7.8μm)、黄鸡N系(36.7±1.9μm)、黄鸡K系(37.2±0.7μm)、黄鸡M系(38.1±3.1μm),江西鸡与黄鸡N系、K系之间的差异均达到极显著水平(P<0.01)。②肌纤维密度(根/mm2)由小到大依次为黄鸡K系(424.5±39.3)、M系(465.5±91.9)、N系(471.5±63.0)、南海麻黄鸡(568.1±59.7)和江西鸡(655.5±182.6)。③优质肉鸡的肌纤维直径和密度与肌肉品质之间有密切关系。

摘  要:
The chest muscle fiber diameter and density,which came from five chicken breeds(Jiangxi yellow chicken,Nanhai yellow chicken,Yellow chicken M strain,N strain,K strain),were surveyed and determined.The five chickens were raised under the same condition from 1 day to 56 days.The result indicated that:①The order of the muscle fiber diameter from small to big was as follow: Jiangxi yellow chicken(30.1±3.1 μm),Nanhai yellow chicken(35.3±7.8 μm),Yellow chicken N strain(36.7±1.9 μm),K strain(37.2±0.7 μm),M strain(38.1±3.1 μm).②The order of the muscle fiber density from small to big was that,Yellow chicken K strain(424.5±39.3/mm~2),M strain(465.5±91.9/mm~2),N strain(471.5±63.0/mm~2),Nanhai yellow chicken(568.1±59.7/mm~2),Jiangxi yellow chicken(655.5±182.6/mm~2).③High quality meat chicken had close relation with the muscle fiber diameter and density.
