摘  要:
Bamboo leaf extracts have a variety of active ingredients,and have the advantages of safety,high efficiency,stability,controllability,non-toxic and so on. The active components of bamboo leaves are widely used in food industry,and the application of bamboo resources will have a bright future. This paper introduces the active components of bamboo leaf extracts,including flavonoids,mineral elements,polysaccharides and other components,which will provide reference for the research and development of bamboo leaf extracts in food.
