纽甜的特性及稳定性研究

摘  要:
纽甜属于二肽类强力甜味剂,是阿斯巴甜的衍生物,是迄今为止世界上最甜的合成甜味剂。试验研究不同温度下纽甜的溶解性以及与糖精钠混合后的溶解速度。结果表明,温度越高,溶解越快,与糖精钠混合后,溶解速度也相应加快;应用高效液相色谱法测定纽甜在不同pH水溶液中及不同温度不同时间下含量变化,以研究纽甜针对不同体系和条件的稳定性。结果表明,纽甜在酸性溶液和水溶液中较稳定;纽甜在偏碱性条件下非常不稳定,40 d时的保留率<10%。纽甜在<100℃及瞬时高温稳定性较好,在>100℃时,随着时间的增加,温度的升高,纽甜的稳定性越来越差。

As a derivative of aspartame, neotame is a new nonnutritive and high-potency sweetener. This study aimed to find neotame solubility under different temperature, the dissolution rate of mixes with saccharin sodium.The results showed that the higher the temperature and the faster dissolution rate, mixed with saccharin sodium, dissolution rate also to speed up accordingly. The HPLC method had been used to investigate the effects of pH, water solution, different temperature and different times on the stability of neotame. The results showed that in the acid condition and water solution neotame had a good stability. In the alkaline condition, neotame was unstable stability with the retention rate less than 10% after 40 days. Under 100 ℃ and instantaneous high temperature, neotame had a good stability, above 100 ℃, with the increase of time and temperature, stability was getting worse.
